Ingredients:

• 5 lbs. turkey thigh meat, raw
• 1 cup onions, diced
• 1 cup celery, diced
• 1 cup carrots, diced
• 1/2 cup tomato paste
• 1 to 2 gallons brown gravy (demi sauce)
• 1 qt. burgundy wine
• 2 cups potato wedges (roasted)
• 1/4 cup oil

• 3 1/4 lbs Yukon Gold Whole Potatoes
• 1/3 lb Butter
• 1 cup milk
• 1/3 oz salt and pepper (to taste)

We LOVE mac and cheese! The Jiko recipe is a particular favorite of ours, so give it a try this Thanksgiving.

The sauce is one of the BEST parts!

Mornay Sauce

• 1/4 cup butter
• 1/4 cup flour
• 1 quart whole milk
• 1 1/4 cups Quattro Fromage (4-cheese mixture of asiago, provolone, fontina, and gruyere cheeses)
• 2 pounds elbow macaroni
